Healthy Eats: Pita Pizza

Dieting can be very hard, especially when you are food obsessed. One of my favourite glutenous treats is pizza, but since I’ve been watching my weight I’ve had to find new ways to make the gorgeous Italian pie healthy. Hello pita bread.

Since discovering pita makes the perfect, crispy base we don’t have pizza at home any other way. This simple week night treat is on high rotation at The Shoebox (yes, that is name of our home), and even picky E is impressed.

Here are two of my favourite at home pita pizza toppings for you try out on this long weekend.

Sweet Potato

1/2 Sweet Potato, thinly sliced – steamed till soft
1 tbsp ricotta cheese
1/2 tbsp basil pesto
1/3 cup roasted capsicum, drained of oil
Mixed herbs

1. Place pita base in grill for a few minutes to crisp up.
2. Remove from oven and top with basil pesto (for base), ricotta cheese, potato and capsicum. Sprinkle with herbs.
3. Bake until golden brown.
4. Enjoy!

NOTE: You can use regular cheese instead of ricotta, but dieting has taught me ricotta is so much better for you. Also, if you’re feeling creative a swirl of BBQ sauce is a lovely combination with the sweet potato.

Mediterranean Chicken & Vegetable

1/2 chicken breast, shredded (I just buy a cooked chook from Coles)
1 tbsp ricotta cheese
1/2 tbsp basil pesto
Black olives, diced
2 mushrooms, thinly sliced
1/4 cup roasted eggplant
1/4 cup roasted capsicum
1/4 red onion diced thinly
Rocket to serve

1. Place pita base in grill for a few minutes to crisp up.
2. Remove from oven and top with basil pesto (for base), ricotta cheese, chicken, mushrooms, eggplant, onion, capsicum and olives.
3. Bake until golden brown.
4. Serve with rocket.
5. Enjoy!

NOTE: Once again normal cheese can be substituted for ricotta – it’s all up to you!

Eating pizza and watching your calorie intake – the perfect combination over the Easter break! Now you have calories to spare for all that chocolate.

  1. Good to know Ricotta is better for you. I’m that anal parent looking at the back of everything and do you know store bought (as usual) contains preservatives but the one I tend to get from the deli or butchers doesn’t contain any. The smart packaging from the supermarket fooled me for years!

    • My grandmother likes to buy buckets of it fresh from a Europen deli so we never not have it in our fridge, haha. I sometimes wonder how we’ll get through it all! It’s also delish on toast with banana or berries!
